HELP: Green sauce for tamales needed

While working my way through college, I use to work in a mexican themed bar where we prepared a roux based green sauce with chicken stock with finely chopped Jalepeneos. We used it on enchiladas, but tonight I'm doing some fresh cheese tamales from Costco (so good!).

I know there was probably more that went into it, but for the life of me I can't remember.

Any input an a nice hot green souce would be appreciated.

Thanks in advance.

You might have to look at two recipes on my site, but these should be able to get you dialed in. The green sauce above (which is meatless) does not have the roux thickener, but the tomatillos provide some thickening. The green chili does have a roux added at the end, and cooked down. I'm thinking you may be able to pick some attributes from each and come up what you are after.

The Green Sauce in the MOP, BASTE & SAUCE section, and the Green Chili is in the ONE DISH MEALS section. If you ever want to make your own tamales, I have a how-to in the SIDE DISH section.
    Happy Trails
