Blackened codfish sandwich

I baked some burger buns this afternoon and thought it might be better if I used them with fish instead of beef. Here is the recipe.

So I blackened up some cod on the small.

Assembled with some tarter sauce.

Made an awesome sandwich, but I need to try these buns with a real burger, they were killer. -RP

No I ordered one today, but after making these I really don't think I need it. You just shape it into a ball then press it out to about 4" dia and let it rise. They came out really soft and a nice flavor with the seeds in the dough. -RP

I'll have to try some cod done like that. One of my favorite fish. It always reminds me a little bit of crab meat. Great job on the blackening!

Wow, bread looks terrific. I was just talkin to Diana 'bout makin fish samitches,... we try to eat fish every Friday. Last week it was pan fried haddock with Cajun seasoned breading.
I should try the buns, haven't baked bread in a while, work has me outa the baking loop. :(

Use a very hot pan and some Paul Prodhomme's blackened redfish seasoning and olive oil. -RP

Great looking fish, Randy! I need to expand my comfort zone and do more fish so thanks for the inspiration.
You'll love the buns on burgers or anything else...I have used that recipe before and they are awesome. I also was about to buy the pan but it was out of stock at the time so I just did them free hand...now I won't be ordering the pan.
