Simple Stuffed Pork Recipe

I'm trying to find a simple recipe for stuffed pork. I've searched on here and off the forum. I'm looking for one with mushrooms, onions, breadcrumbs, maybe spinach. I know sounds boring compared to a lot of recipes I've researched.

Maybe think about adding a cheese, a meat or a fruit. Once you have splayed the pork out, pound it with a meat hammer to even the thickness out.

Ratios? Till the filling is bursting out the sides!! Lots of cheese. The mushrooms will make it extra juicy.

Not boring, just not over the top. Simple things are often the most delicious ones. A laundry list of ingredients and heavy layers of seasoning can overwhelm (your palate, any accompanying wine, and the poor pork).
Sticking to your basic idea, you could fancy it up a bit by caramelizing the onions first in a little bacon fat or butter, then sauteeing a mix of chopped mushrooms (shitaake, portabella, or whatever you can get) and garlic until no longer watery, then stirring in some chopped spinach & breadcrumbs. A restrained amount of freshly grated parmesan, plus a little chopped fresh sage will take the stuffing in an Italian/porchetta direction. A handful of pine nuts would be nice, too. -

My preference is
Spinach - always
Just one from each of the below
Something crunchy - pine nuts, pecans, walnuts, almonds, etc.
Something sweet - grapes, raisins, peach preserves, etc.
Some cheese - Whatever you like
Something savory - Peppers, onions, etc.
No sauce - just rub
Prefer tenderloin over loin
Occasionally wrap the whole thing in bacon :evil:


Sweet potatoes in this one along with peach amaretto preserves
Raisins and almonds in this one

You really don't need amounts, just layer in what will fit. I like what Frank said to use.
This was frozen spinach, boursin cheese and toasted almonds:
On the outside, I rubed with EVOO, garlic and rosemary:
