First off, apologies for the craptastic pictures, we did this via the blackberry.

I'll say that this was one of my most enjoyable cooks on the egg that included a pan. It turned out incredible.

    Fencewire, although the pics are blurry, I can certainly see that the paella looks great! :)

    Is that merely a piece of foil beneath, or some sort of heat diffuser? I'm contemplating paella, but I was thinking of doing it indirect so it doesn't scorch. How long and at what temp?

    @ Susan - we used a Sur La Table recipe from a paella class we attended last week. I don't think it's available online, but I can reproduce it if you'd like to see it.

    @ Celeste - I did it direct and kept the egg below 350 dome temp. The foil on the bottom of the pan was purely for ease of cleanup at the end.

    On the timing, ehh, I guess when it's done, it's done. It went for about 25 minutes after we put the liquid in. It could have gone for a few more minutes to crisp up the bottom.

    I did lay a piece of foil loosely on the top after putting the liquid in to help it simmer.
