Big ol' Beets

Some of the veterans might just roll their eyes. But I am counting today's eggin' a success just because I loaded it up with new lump, lit 'er off and everything has gone like I knew what I was doing. I have it stabilized at 450° and I am indirectly roasting away some big ol' beets. It is just the start of the meal. I have pork or beef and haven't made up my mind. I am just enjoying the ride.

We love beets roasted on the Egg!!!
Let them cook a little, slip the skins off, slice them, sprinkle with some chopped, toasted pecans, fresh oregano, chunks of gorgonzola cheese and add a little balsamic and EVOO. YUM -

Being that I am in week one of eggin' I would have to say, no. But, I do have a great recipe for borscht that could easily be adapted to the egg.

How timely is this? I have walnuts no pecans and I am minus the cheese but it sounds good even with what I do have. I know, I know the cheese would make it but....next time.

I agree w/BobS, goat cheese works really well. We love beets roasted on the egg. Going to the Farmer's Market tomorrow, hoping they have some golden beets. Mmmmmm.

Now we are even..an idea for me! I love beets. I love cooking on my egg ... they go together like a KA meat grinder and mixing your own hamburger patty mix.

If I read correctly and this is your 1st week o'eggin then have you spatchcocked a chicken yet? You should ... that's when it really hit me that I made the right decision getting Eggwardo (my L egg)everything since has just been edification... peace! Mike R. (Eggwardo

I spatchcocked several chickens on my gasser and actually was fairly pleased but I am sure that they can't hold a candle to one off the egg. I have a Weber recipe I want to convert. I'll share the outcome when its time.

I assure you that I won't fix beets on the egg again without cheese of some kind. Even shaved parmesan would help it.
