Revisiting Zingers PB post. He smoked at 180 till PB hit 150. Still looks raw enough to fry. Any one have pics of a cold smoke PB? I know that Doug in Eggmonton has done it what way. I'm wondering what the differences' are.
Probably overthinking this...

Molly, I followed the recipe that called for smoking to an internal of 150 and was not happy with the final product. It was cooked too well done to fry like bacon, if you think about it it is edible at 150. The second attempt I cold smoked it for a couple hours and it came out much better. -RP
  • Hey Molly. I actually got mine to about 140 and pulled it. It came out great.

That is what is what I thought. I decided to cold smoke it all. If you were going to Texas you could tastw all three flavors. ;)
