Pork Loin Pinwheels!!

For christmas gifts this year, I told my family that I would cook for them on my (at the time) newly purchased BGE. Our schedules have not been able to cross and we finally got a chance to have them over. I wanted to do something different and experiment with something that I have never done before. Well.....lets just say I made a fantastic decision.
I decided to do a pork roll.
Started out with a whole pork loin. Butterflied and pounded out and then wrapped with Wrights brand thick cut pepper bacon.

Made us a couple of ABT's for appetizers. Put them on for an hour with the roll.

Sauteed spinach, sun dried tomatoes, diced red onions, and pine nuts in EVOO

Topped with six blend italian cheese.

On the Large BGE. 350 dome indirect cook.

About an hour and a half later and 140 degrees internal.

Plated with steamed brussel sprouts and french bread.

Some super happy parents!!!

I love your stuffing. Heck just any two of those ingredients would have been good but all of them together are not only an excellent combination, they are colorful too!

Looks fantastic. After you "wrap" with the bacon, do you flip over and put the rest of the ingreds on the pork, then roll up? It looks that way in the last photo. :S
