Great low and slow for roast beef/pit beef.

I go 250 until the internal temp is 125. You will have rare roast beef. Do a search on here for "pit beef".

I've made good pot roast out of one and pulled beef out of another. I used 'Clays' pulled beef BBQ' recipe from the cookbook section and 'Dutch Oven Pot roast' for the other one.Large BGE
