How many times to flip?
Just read an article on this and was curoious about the opinion of some of the cooks I respect the most, Eggheads.

When I see little blood droplets forming I flip once.

Only once if I can get away with it, sometimes I sear burgers high temp around 600° on the mini...think flame broiled...and then transfer to a 300° or so large to finish em off..In that case I may end up flipping more than just once...
-
Once here.

One flip....and one flip only Vasili.

Here's the link to the article. I suppose it would apply to steaks and other meats as well. And yes, a stovetop skillet in 76deg room temp is different than the inside of an egg, but still makes you think.
I'm a one flipper also.

Even I gotta laugh at that one...Thank you...

once for me usually. unless i'm doing a bunch and end up moving them all over the place (say, cuzza hotspots or hugely varying 'doneness' requirements)

Didn't want to get y'all riled up'n'such. :woohoo: Can't wait to see you and Sally in a month.

Interesting they claim in the comments that sous vide makes a good burger. Might just try that...

LOL...it should be fun...and it's coming quick..

Mark,
Be careful, there are eggs that do not react well to bullets

Ron,
One 90* turn, one flip and another 90* turn here.

Usually once, sometimes more. Don't really notice any difference - it's just a burger.
I hate it when I go to the kitchen for food and all I find are ingredients!

Ron,
The article was very interesting. Might try a 200-225* cook, then a high temp sear. Could cook a large batch at the low temp early, then sear them when time to serve them up.
Thanks for posting..... -
i am a two flipper,,,,,, put on, flip, then flip again, then put cheese on the hot side.....
Large egg and mini max egg plus a Blackstone griddle

I sear at 500 for 2 minutes per side then shut everything down and roast to temp. So 2 flips for me.

If you flip it more than once, you're playing with it.

I am a MFBG (multiple flipper buger guy). However, I am that way because a very, very long time ago when a good hamburger was fresh made and dripping with juice you could buy it from Wendy's and that is where I learned to cook hamburgers. We were trained to cook to a point then turn, cook, turn, cook, turn and then serve fresh off the grill. Hamburgers should not have a hard outer shell, they should be soft on the outside and cooked all the way through and then juice run out of them when you bite into them. At big family get togethers my family demands that I cook the hamburgers and it drives a lot of my male relatives insane! They don't understand the flipping. On the egg though i get away with about 4 flips.
-
one flip, watch for the juices to rise and off the grill. i remember the first several times i cooked burgers on an egg, they were horrible, in the end i determined it was the thermapens fault, not knowing what temp a burger is at seems better to me. no thermapen with the burger :laugh:fukahwee maineyou can lead a fish to water but you can not make him drink it

I guess that is like asking which shoes do you put on first....we all have habits.
If I can remember, I guess I flip mine twice most times. The last one is not for cooking reasons but to check the color on the bottom side of the 1st flip -
Oooh, a GAME! Can I play?
"The hard part about cooking chicken is knowing when to flip."
Oh, and for the record, I'm a one-flipper...unless I flip prematurely, in which case I flip it back and spend a little more time on it, to make sure my wife is satisfied with her burger. -
And to quote the rip-off movie:
"If someone asked me if we should flip the burger, a simple "Yes. By all means sir, flip that F$@%er, twice!"
