    Here is one.

Beef, Tri-Tip, Grilled, W/Tequila Marinade &Cherry Tomatoe Relish

Here is a link to an epicurious.com recipe called:GRILLED TRI-TIP ROAST WITH TEQUILA MARINADE AND CHERRY TOMATO RELISHI did not make the Cherry Tomato Relish, but we loved the tri-tip. I marinated for four hours under vacuum....tom

    INGREDIENTS:
Marinate the tri-tip for at least two hours.
    1/2 cup fresh lime juice
    1/2 cup chopped fresh cilantro
    1/2 cup olive oil
    1/3 cup soy sauce
    1/4 cup tequila
    7 garlic cloves, finely chopped
    2 tsp grated lime peel
    2 tsp ground cumin
    2 tsp dried oregano
    1 tsp ground black pepper
2-2 Lbs. Beef loin tri-tip roasts, trimmed
    Cherry Tomato Relish

    Procedure:
1 Whisk first 10 ingredients in medium bowl. Using small sharp knife, pierce meat all over. Place meat in large resealable plastic bag; add marinade. Seal bag. Refrigerate at least 2 hours or overnight, turning plastic bag occasionally.
2 Prepare barbecue (medium-high heat). Remove meat from marinade. Discard marinade. Grill meat to desired doneness, about 10 minutes per side for medium-rare. Transfer to cutting board. Tent with foil; let stand 10 minutes. Cut diagonally across grain. Serve meat with Cherry Tomato Relish.

  • Here is a pretty good one…
I also have one that I’ve tweaked (notes of notes on it)….But I have to find it.

    TLC (Tequila, Lime, Chicken)
    North Portage Smoke-Shack

    1/2 C. gold tequila
1 C. freshly squeezed lime juice (5 to 6 limes)
1/2 C. freshly squeezed orange juice (2 oranges)
    1 T. chili powder
1 T. minced fresh jalapeno pepper (1 pepper seeded)
    1 T. minced fresh garlic (3 cloves)
    2 t. kosher salt
1 t. freshly ground black pepper
3 whole (6 split) boneless chicken breasts, skin on
Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl or gallon baggie. Add the chicken breasts. Refrigerate overnight.
  • Hey...I found the notes... ;)
Seems the only thing I really tweaked was an addition of 3/4 - 1 t. of cumin, bumped up the garlic to 5 - 6 clove crushed and used crushed red pepper flakes when I didn’t have fresh jalapenos.
