Smoked Salmon - Flakey or Not?

I have cured many a salmon into Gravlax - which is essentially the "bagel lox" we all know and love, but not smoked. It is not flakey, it is best sliced paper thin with a sharp knife. If I smoke a gravlax, will it get flakey? Or will it stay as oily and stiff as it is when it comes out of the gravlax cure?

the cures they you all have used before smoking - do they leave the fish stiff and oily like I've described? most pics on the forum have a pretty flakey appearance.
