We're havin a trail ride Sunday.UK-OH!Do ya think you could cook for us?Why YESSIR,WHATEVER YOU ASK is DONE!Even if I have plans ,they go on backburner for DAD!Which I did ,but that point is MUTE!Whatta ya want Pulled Pork or Ribs?Neither.QUAIL!I have 75 quail in the freezer and I want you to cook em.O.K. How do you want em cooked?I don't know,GOOD,grilled I guess!How many people POP?I don't know,50-60.I like Homemade biscuits,gravey,rice and tender,delicious Quail!Can you do it?OH HELL YEAH!!!It's DONE!.....I'm SKREEWED! :huh: :whistle:

    I think that you will need to serve serious quantities of adult beverages, preferably of a distilled nature.

    Quail, Bacon Wrapped, Stuffed, Richard Fl

    INGREDIENTS:
    6 Whole Quail
    *****OR*****
    1-2 Cornish Game Hens
    Stuffing
    3 cups Cooked Rice, Basmati preferred
    1/2 cup Pignole, Pine Nuts, Pecans, Walnuts, your choice
    1/2 cup Chutney
    1/4 cup Scallions
    Wrap
    12 Pieces Bacon
    SAUCE
    1 Jar Raspberry Jam 4-6 Oz. or Orange Marmalade
    Dijon Mustard
    Balsamic Vinegar
    Lemon Juice
    Salt/Pepper




    Procedure:
    1 Cook Rice, Basmati or Jasmine preferred, Use 1/3 orange juice by volume of total liquid, if you like sweet, used to cook rice.
    2 Mix cooked rice w/ nuts ( pignoles or pecans chopped), chutney, scallions, stuff quail, works well w/cornish game hens, just takes more. ingredients to stuff birds. Use: pepper, salt,poultry seasoning whatever you like for rub.. Stuff birds w/mixture.

    3 Wrap birds w/bacon , may take 2-3 pieces to totally wrap quail, cornish lay 2-3 pieces on breast and cook indirect breast up. For quail skewer w/large tooth picks or something else to hold the bacon.
    4 Place in oven baking dish on rack to keep drippings underneath or place on BGE and grill using indirect method. Bake 325-350 F for 40-50 minutes until bacon is crispy, Start quail birds breast down, and turn breast up 1/2 way into cook. "V" rack works well for cornish, cook breast up with bacon strips.
    Sauce
    1 Mix the sauce ingredients in a pan on low heat, add raspberry jam first. Tablespoon Dijon, Tablespoon Balsamic vinegar. Lemon juice and seasoning. Bring to slow boil and stir; adjust to your tastes. Orange marmalade may be substituted for the raspberry.
    2 Rest 10 minutes. Serve. If Egging be careful not to let the drippings flare and burn bacon/birds. Great reheated next day.

    Hoss...Relax... :blink: . DAD wants quail, BUT his BUDDIES want pulled pork sammies!!! :woohoo: Five butts, and bunch of buns, a bucket of coleslaw and tater salad.... As far as the quail goes....introduce it AFTER people have had BBQ....and an idea for you.... Serve LEAPING FROGS instead.... :woohoo:

    Actually...I have other quail pics I can't find right now, but I wrapped the leg/thigh portion in a piece of bacon, seared, then seared the breast portion the last couple minutes to keep the breast med rare. (sorry I cant find those pics...) Certainly Dad doesn't want you to go through your quail reserve.... :pinch: Offer quail as an after dinner treat. B)

    (Edited....looked like quail in PB...these are cornish hens....but they look very similar! I will keep looking for my quail pics.)

    Hey Hoss,

    After LMAO, I thought wow...what a great opportunity to show your stuff to family and friends and with the great advice from Richard and Michelle, well you could do worse. I'm in LC's camp, load'em up with BBQ and slaw and wow'em with the some quail.

    I don't have any answers for you but could you come and give some lessons to my 3 sons on how to be a great son?!?!?
