Lemon juice used in a marinade

I was given a way of doing leg of lamb greek style with olive oil, lots of garlic and lemon juice. Doesn't lemon juice "cook" when being used as part of a marinade ?

It will a bit but not so much with meat as it does with fish. I usually cut marinade time when I use a strong citrus. Using more oil will slow the process some.

If you want lemon flavor without the acid of juice, use lemon zest instead...a microplane grater makes zesting a snap, and the tiny bits of zest will perfume the marinade with lovely lemon oils.
