Short ribs coming up

Saw some nice looking beef short ribs.

Cooked them indirect for 2.5 hours at about 280 (that medium just wants to be hot!)

Ready to foil. Covered in BBQ sauce.

Hopefully the temp will fall back to 250 or so. Leave em to tenderize for a while, and then back on the grid to finish up.

    Overall, it was very good. Could have cooked a tad longer, but the kids were hungry. Was not planning a low & slow, but when I read how to do them, I changed my plans.

    Bash, the short ribs look delicious with the carmelized sauce. :) I guess you either have to do those with a quick sear or lo and slo.

    That's what I read this afternoon. But it said to make the quick cook work they had to be sliced pretty thin. So I decided to do low -n- slow. Came out quite tasty. Everybody wanted seconds and thirds (me, wife, and all 4 kids).

    Good impulse buy :)

    I hear ya about the medium, mine works a lo-n-slo best at 250. Nice pix!
