Country Ribs

I'm planning on cooking spare ribs (country ribs) for the first time tomorrow...not just on the BGE, but for the first time ever. Can someone give me an estimate on how long a "normal" cook lasts? Gotta keep the wife happy and have dinner more or less on time....

    There's a big difference in "country style"ribs and Spares."Country Style" ribs are cut from the Butt.Spares take a LOT longer to cook!

    The Country Style will cook up in just a few hours!
    Country Style, at least around here, are pretty thick (maybe 2”x 2”x 8”), individually cut…Not a “rack” so to speak.

    I just did some a bit ago and had then on, indirect, at 250 F. for about 3.5 (almost 4) hours.
    At the one hour mark they were turned and then continued….to a mop, a set and falling apart tender.

    If it is spare ribs, plan on 6-7 hours at 240 dome - indirect.

    Look for a nice pull back on the bones - 1" or so

    I did spare ribs for the first time and they are pretty easy (or maybe I'm slowly forgetting the pain) no once they start to cook it's easy and if you follow the guidelines on here they should turn out great!!! Mine took about 6 1/2 hours at 250 indirect.

    Yep what Frank and Hoss said. I didn't start getting great ribs until I let the darn things cook, lo-n-slo, for that 5.5 to 7 hours, so my advice is plan for the long cook. Good news they'll keep in foil in the oven if they finish up a bit early.

    Check out thirdeye's site for the procees of trmming out the ribs and the cooking part. Also search for posts by CarWashMike - lots of post out here on ribs.

    Good luck and don't peak at the ribs for the first 4 to five hours.
