how to reheat fajita meat for party?

We're having about 60 people over for a party on Saturday and have decided to have a little fajita-fest. Since I have only one large Egg (with an adjustable rig), I'm going to have to cook the steak and chicken for the fajitas in shifts the night before or earlier on the day of the party. So, my question is, how do I re-heat the meat for the party so that it doesn't dry out? Should I use crock pots or just heat it up in aluminum foil pans in the oven and put it out and hope it doesn't get cold? Should I put any liquid in the crock pot or alumnimum trays?
Any suggestions would be greatly appreciated. I realize that the easiest answer would be just to get a second Egg, but that's not going to happen by Saturday!
Thanks,
Mike

A Cast Iron Dutch Oven or skillet with lid would hold the heat pretty well, you could put it on the buffet table on a trivet. If it gets too cool, you could set it on the stove for a few min.

Thanks, Bacchus. That might work. Would you put any liquid in the DO other than any juice the came out of the meat after cooking?

I wouldn't but others might use a liquid. I would also make sure not to cook the beef past med rear on the initial ccok, so it will retain alot of natural juice. Maybe undercook the chicken slightly as well.

Thanks, Bacchus. I think keeping the steak on the rare side makes sense, but am a little concerned about undercooking the chicken. I'll just follow it closely with my Thermapen to make sure it doesn't get overcooked.
