Stuff Mushroom HELP!

I need some help. I picked up some nice shrimp and mushroom yesterday at the local store. I would like to do some stuff mushroom on the grill. I am having the in-laws over and my Mother is coming down from Northeast Texas. I would like to blow them away with the food off the BGE. Having pork stakes,potatoes,salad and I would like to add stuff mushroom. Thanks for any and all help.

Tried these recently and will say they were very good. I save by Bomba for special things so I used some hot salsa and they couldn't have been better!
Stuffed Mushrooms

Ingredients:
24 med. sized Mushrooms
2 Green Onions, chopped fine
1 & 1/4 cups shredded Cheese (I used Parmesan)
1 cup Italian Bread Crumbs
1/2 cup La Bomba and 2 Eggs, or, 1/2 cup salsa and 1 Tbls. Olive Oil
Preparation:
Remove the stems from the mushrooms.
Chop the stems fine, mix with the last 4 ingredients and stuff into the mushrooms.
Grill direct at 350° F. until mushrooms start to soften, about 15 minutes -
This stuffing works great also in abt's and shrooms. Cook the shrooms 350F 20 minutes or so. Enjoy!

Here's our recipe we just did at the Sunshine State fest....
Stuffed Mushrooms
by Rick & Jen Bostain (Rib Bones)
Ingredients:
12 oz. package mushrooms
2-3 tablespoons butter
1 tablespoon vegetable oil
3 tablespoons chopped onion
1 tablespoon chopped shallot (or green onion)
3 tablespoons Italian bread crumbs
1/4 cup grated Swiss cheese
1/4 cup grated parmesan cheese
4 tablespoons chopped parsley
1/2 teaspoon tarragon
1/2 teaspoon salt
1/4 teaspoon black pepper
2-3 tablespoons half & half
Topping:
1/2 cup grated Swiss cheese
1/4 cup butter
Preparation:
Wash mushrooms. Remove and chop stems. Saute stems, onions and shallots in oil and butter over low heat 6-8 minutes. Remove from heat.
Add bread crumbs, cheeses, parsley, tarragon, salt, pepper and half & half. Mix well.
Fill mushroom caps with mixture and top each with a small amount of grated swiss cheese and a dot of butter.
Bake at 375 degrees dome temp indirect with platesetter (feet up) on a screen or tray with holes for 20-25 minutes or until tender.
