Ok, todays the day, I want to do my corned beef on the almighty egg. I want to hear your suggestions if you have done it before.

There was a thread last week which covered alot, with contributions by two of the most prominent Eggheads, Thirdeye and Fishlessman. You might go back about 6-8 pages or do a search.
Good Luck! -
if im going to smoke a cornbeef in the egg i soak it 6 to 8 hours in water if its homemade by my butcher, the ones from a big supermarket need a good 12 to 24 hour soak with water changes before egging, these are salt licks and cooking them without the soak really makes them salty. i know others do it without a soak but i cant eat it that way. did you do this step and is it homemade or a red storebought. if you didnt do this i would suggest a traditional boiled dinner, homemade, full boil for 30 minutes, then simmer for 45 minutes per pound. storebought, full boil for 30 minutes, change the water and bring to a boil, then simmer for 45 minutes per pound. add root veggies final 45 or so minutes, add cabage last.fukahwee maineyou can lead a fish to water but you can not make him drink it

if you go the traditional way, it should be falling apart so cook longer if needed, usually have some wine vinegar handy to sprinkle on the beef and cabbage. now i have seen cooks were the beef was seared then boiled, but i have never tried that and still think it would be over salty for my likes

if you did soak it, follow thirdeyes pastrami recipe

Here is a link to the thread I posted a couple days ago, it has step by step pics of the process. I smoked a corned beef using thirdeye's method.
