need help with a catfish filet recipe.

    Depending how you want to cook them...

    Lemon Pepper and some butter. Put in a CI Skillet or Ceramic DO or even on a piece of aluminum foil.

    Cook until fork flaky about 140° or so.

  • I cook it up in butter in a cast iron skillet on the egg, fish seasoned with salt and pepper. Flip the fish after a few minutes. Remove the fish and make a white wine, butter and lemon sauce in the pan to pour over the top.

    Here I sauteed mushrooms in butter first, removed the mushrooms, sauteed the fish, removed the fish, made the sauce, added capers and the cooked mushrooms at the end, then topped fish with sauce.

    You can't mess it up, just don't over cook it.

    Yankee's Cat Fish Stew
    This was my father's recipe - his nickname was Yankee. You can also substitute chicken
    or canned salmon for the catfish.
    Ingredients
    5 lbs catfish, cooked & de-boned (fillets are
    easier!!)
    4 slices fatback
    5 lbs potatoes, peeled & thinly sliced
    3 lbs onions, thinly sliced
    2 Tbs salt
    2 Tbs pepper
    hot pepper sauce
    Procedure
    Boil catfish (reserving broth), de-bone and set aside.
    Over high heat, in large Dutch oven, brown fat back. Lower heat; discard fat back (or
    when no one is looking, eat it…it's delicious & once a year won't kill ya!!), leaving drippings in pan.
    Place Dutch oven on pizza stone in the BGE®.
    Add one layer of potatoes & one layer of onions. Top with all of the fish.
    Repeat layers of potatoes and onions.
    Pour about half of the broth over top. Add several dashes hot pepper sauce & salt &
    pepper. Do not stir!!
    After one hour Cover and let simmer for approximately 2
    hours. Just before serving, stir well.
