cooking multiple boston butts

I just got an XL egg and am planning on smoking 2 six pound butts over the weekend. From my reading it seems that the rule of thumb is about 2 hours of cook time per pound. In trying to determine how long this will take, should go with total pork weight 12 lbs or weight per Boston butt 6 pounds.

My inclination is use the 6 pound number, but thought I would post the question here. The last thing I want is everyone ready for dinner and the pork still have 6 hours cooking left. :laugh:

    1 1/2-2 hours per pound of the largest butt. Measure temp on the smaller one but pay attention to both near the end.

    as long as they aren't touching (which on an XL there's no need), it's individual weight. Time of course is a relative thing, depends on the temp being cooked at and the butt itself...I've had some that went 45min a pound and some that went 3hrs a pound.
  • If you have a 225-235 dome temperature, you are looking at about 12-13 hours, but check for the internal meat temp, it should be 195-200, no foil needed, unless you are transporting it or wanting to keep it hot to serve later.

    The first 20 or so times I smoked a pork butt, I didn't check the internal temperature (those were my pre-forum days). I just cooked until the meat was practically falling apart, and it turned out just fine.

    I smoked two butts last week, 7.4# and 7.9#s. The small one went 12 hrs and the one a 1/2# heavier took another two hours. Go figure. Plan for early. It's easier to keep them warm than keeping your guest waiting.
