Very nice Ross. Love the 'shoes' on the legs of the chicken. Cooking potatoes on the egg sure makes a big difference.

The skin sure looks great. What temperature did you pull the bird at? I don't get that brown unless I am cooking the bird at 400° - 500°. I usually cook raised direct. I wonder if the plate setter is helping out with that skin.

Over a full hand full of apple chips cooked at 400°

Apple chips about 3/4 handful cooked at 500°

We really like the smoked chicken around here, I do one every week. I'm going to have to try the herb butter under the skin.
