Pretty chicken

Mixed some butter with thyme, preserved lemon, and garlic and put it under the skin of some leg quarters. This is the prettiest chicken I've ever cooked. -RP

Randy they do look pretty. It looks like indirect cook, that is the best way I found to do chicken IMHO.

Had a bumper crop of lemons on my tree this year so I tried making preserved lemons. Just quartered them and jarred them with kosher salt and let them sit a month. -RP

Indeed a very good looking cook. I'm also jealous of all the lemons you got so far. Right now I still have snow on the lawn and in the garden.Everyday is Saturday and tomorrow is always Sunday.
