Norma got some nice pita today so souvlaki was on the menu.
Vacuum marinated pork tenderloin in greek salad dressing and Diana's olive and feta and garlic.

Made a tray of garnish.

Skewered the pork after tha marinade

Grilled at 400*

Steamed the pita and served with tzadziki

i had a taco bell taco the otherday and didnt take the tablespoon or so of lettuce out, almost went home for the day, its brutal on my system. thought o heck its just one taco worth of lettuce, live and learn for me. go figure i can eat the lousy tacobell meat all day long and the healthy lettuce takes me down  some tebouleh would go nice with that

Rebecca,
I only make them when I get really fresh pita. Our microwave has a steamer feature which really makes them pliable. I prefer the Mediterranean style that you can pull open and fill and roll like falafel.
