walnut crusted trout

walnut and panko encrusted trout with a danish blue cheese sauce. added a drizzle of honey on top with more dry roasted walnuts. i think im turning into a meat fisherman B) fillet and release. thats a full sized lasagna pan to get an idea of the size of the fillet

coated with rice flour, then into a bath of eggs and light cream, then pushed it into a bed of walnut, parmasian seasoned panko, and a little jiffy corn muffin mix. then into a quarter inch of oil in the big castiron, went stove top, not messing with oil in the egg in the dark.

poured the blue cheese sauce on, was pretty pungant so added a good drizzle of honey and more dry roasted walnuts

going to freak some friends out with this recipe come spring, was incredible, catch and release is overrated :laugh: well ill still let some go B)

    Is there anything better than fresh trout? that looks like a great covering and think I might give it a try on something Neil might catch..... if he ever catches anything! he is bummed that they are not opening Snook season down here this year. fun to catch and great eating.

    Beautiful job on the trout fishless!! I love the ingredients that you encrusted it with. The corn mix in with the panko and parmesan sound like a nice combination. Would mind sharing your recipe? I would do it without the danish blue cheese sauce.
    Where abouts are you located that you're catching these beautiful trout?

    I bet he is ice fishing on Sabago.... spent a lot of time on the ice with the boys when they were growing up. We had two ice shacks, Boy I wish I had known about the egg then and My mini would be perfect out there!!!

    Snook will reopen in Sept., but now they even temporarily closed tarpon and bonefish. :( Not sure when that re-opens.

    I know.... when he was fishing with a friend in dec it seemed like every other fish was a snook. and some nice ones too. it killed him to toss them back. he was counting the days till it opened and them they pulled it. he about cried!!

    You're brave Julie, I could never do the ice fishing thing. I'm sure your boys had fun doing that. Are you talking about the infamous Sabago Lake in MA?? I didn't know fishless was your neighbor....sort of. :)

    spot i like to fish on sebago hasnt iced over yet, doesnt look good. ice derby there is going to look like a carnaval with everyone on one spot, might go up to see it, but probably wont fish it this year, dont like fishing in one spot with ten thousand people

    that brownie came from upper state new hampshire on ossipee lake. recipe is easy, chopped the walnuts fairly fine and added preseasoned panko that had the parm already in it, dusted the muffin mix on top of the crumbs (if forgoeing the bluecheese which i was going to add directly to the crumbs before deciding on sauce, i would add more parm, the dried stuff). heavily floured with rice flour the fish and dredged the fish though a mix off eggs and light cream, then layed it on top of the crumbs and pushed it down hard to stick and embed them to the fish. veggie oil in the skillet a quarter inch and placed the fish flesh side down, added some rice flour to the skin side as there were no crumbs on that side, after a few minutes flipped it. cream sauce was bluecheese butter and light cream and walnuts. roasted the walnuts dry in a pan for the sauce and to top later. went to get some maple syrup but was out, drizzled afterwards with the honey and nuts, the sweetness went well with the bluecheese and walnuts.

    would need to get you guys out there in minus nine degree weather for a few days, twenty one people fishing two days and that was the only brownie caught :laugh: gave all my white perch to the fish and game club for their annual game day feed coming up, but took their pool money and fish home, one of these years they will stop inviting me :laugh:

    told the buddies in gradeschool that i'd had some beaver over the weekend and my principal sat me down for a good long talk. :blush:

    when is it? maybe it's pelham i'm thinking of?

    OH MY GOODNESS! That looks glorious. I used to try a Macadamia crust halibut with a lemon cream sauce....I had it somewhere and thought I could do it.

    Never really got it right, and that was all before the Egg. Those pics make me want to try again.

    ive always done the derbies with the plaistow fish and game, my neighbor was the president for several years, know most there that actually fish but most just sit and drink so ive never become a member, have to rely on invites

    LOL Oh Anne you might be surprised. on a sunny day when the ice is feet thick it is great. we had the houses on two diff lakes and two snowmobiles with tote sleds and haul everything out. skates, sleds, food, extra cloths oh and fishing gear! they had little heaters in them and I would put a pot of soup on and hot chocolate and Neil and the boys would play all day. we had a big old black/Shepard lab that would almost wet her self when a flag would go up. we would be there from about 6 am till 6 pm. I could sit in side and read all day. lots of great memories :)

    when i got the egg years ago the lacanche just stood there, been gradually using it more and more and its actually from learning so much over the years from this forum thats gotten me to use it as much as i do now. used the big wok burner for the biggest fry pan ive ever seen, and the simmer plate for the sauce :woohoo: little skillet for the walnuts. when i bought the stove i wasnt ready to cook on it but with the help of all here things have gotten so much better with regards to cooking. the lacanche salamander would be next but i dont think they ever got it approved for use here, would have to sneak it in at night anyways because massachusetts didnt even approve my stove until 2 years ago even though it was ul listed. i think im the only lacanche owner to put one of these ranges in a 500 dollar kitchen and sit it on a 40 year old blue indoor/outdoor carpet:laugh:

    people who have not done it on a cold sunny day when there is no dreaded WIND cant understand why or how nice its out there. my worst sunburn was from one of those type days while drinking margaritas in shorts in the sun. man was i in pain and try to find aloe in the winter around here.

    OOOOHHHH I can relate! but when it all come together and the day is right and even if the fish are not hitting, it is the family and fun and food we eat! ok I am ALMOST, but not really, missing the snow right now. I did not say that.... peach schnapps did.....
