Seared Ahi - incredible
Bash
Posts: 1,011
Followed Alton's chimney recipe for seared Ahi.
Marinade was 1/4 cup soy, 1/4 cup honey, 3 tablespoons wasabi, marinade for 3 hours, coat with sesame seeds, then sear for 1 minute per side. Kept some marinade to drizzle over the sliced tuna. Very tasty!
Fresh beets sliced, EVOO, salt

Tuna coated in sesame seeds

After the flip

Plated

Definitely will do this again!

Tweev,
Funny you should say that. When I was at the store on the way home, I picked up the fennel, then put it back down.
Thanks for the link.

that looks fantastic! Not a big beet fan but I love some Ahi Tuna! February is going to be seafood month for me so I am definitely going to be doing LOTS of Ahi Tuna. (if my wallet lets me that is)
Geoff -
I love rare tuna, and that looks perfect. Thanks for sharing.

Richard, Two of my favorites! I can almost taste the seared Ahi tuna and Im sure the beets were tasty. I'll have to try grilling beets sometime. I've only roasted them.
-
What temp did you sear it at? I love seared tuna!!!
-
Not sure exactly, as I seared with the lid open. It was over 500, though.
-
I want to know this, too! And, were the sesame seeds already toasted? PRobably not, because the searing does all the toasting necessary, yes?
-
No the sesame seeds were not toasted. They got a little over toasted on the 1 min per side sear. But the flavor with the soy / honey / wasabi drizzle was just right.
Richard -
Nice cook Richard. I love doing tuna on the egg.
I've started used a cast iron skillet and letting it get scorching hot for the sear. The sesame seeds are terrific as well. I use a mix of white and black.
I've never tried grilled beets like that before. I may have to give those a whirl some time. -

Fantastic. That is officially on my list of things to try...
