Morel Mushrooms

Does anyone have any suggestions for cooking Morels in the BGE? Any help would be much appreciated!

Mushrooms, Morels, RRP
Morel mushrooms are Mother Natures' reward to MidWesterners for putting up with the tornados. Man did these fry up wonderfully this afternoon!
INGREDIENTS:
Procedure:
1 Just a simple wash of a raw egg and some milk. Then shifted on some flour to soak up the wash. Salt and pepper a tad and then fried in real butter. That wonderful taste of fresh morels is a winner!

The only time I had Morels was at a Black Powder Rendezvous and they were floured and cooked in a cast iron fry pan.

If they are plentiful and big, you can stuff them. Duxelles and foie gras are natural. Roast them on a pan or a CI. Deglaze the pan with wine and serve over the shrooms.

I agree whole heartedly! We had the fortune of finding aournd 500 of these delicacies last spring and we were able to freeze several gallon size bags full of the fungus. Need to clean out space for the upcoming spring season.

Foie gras is force fed goose or duck liver.
Duxelles are common mushroms diced and sauteed down with butter, herbs and shallots, then flambeed with brandy.
I am an electrician, not a cardiologist. :laugh:

The offer is tempting..This past spring was our best shroom hunting ever! The cool part of it all is that the kids (age 13, 11, and 8) love to be involved in the hunt as well as my better half. We hunt them and we hunt them hard when the time arrives!

See that is no fair, the kids are closer to the ground and are better hunters.

Sometimes I went hunting on my best friends back deck, where he chilled them in the outside fridge. :woohoo:
He has been known to grab a rib or two while I was gone, so it is all good.

It is a little pricey and PETA is all over it but it is really good. Lightly dust the morels with corn or potato starch or tapioca and saute. Pretty good!

I believe that there is a hint of Native American blood running through my veins, as geneologists tell me. I understand the natural attraction to the Morel!

I remember seeing mention of Hoss's BBQ (I think) making a delicious morel cream sauce he served over steak at Waldorf...maybe last year. I don't recall seeing the recipe. Perhaps someone will chime in since I wasn't there.

I agree with Mike dipprd and fried is the only way to eat. i haven't hunted them for the last5 years. no time
but I hunted them with my father and his friends since I was 7 yrs old

I finally guilted my aunt into taking me hunting this year. She said she may have to blindfold me, but I get to go.
Potential problem, she said it after a bottle and a half of purple (family lingo for red wine), but I'll be standing on her doorstep ready to go. I hope she remembers! -
Now, that sounds interesting as well. I'm sure not it's caloric friendly, but that's OK!

LOL - believe it or not I remember that post! I also recall that batch never made it out of the fry pan on the stove to a plate after I fried them with that simple recipe! I just ate them right there!

COME ON SPRING! In the meantime there's no morels hiding out there - that's for sure!
Re-gasketing the USA one yard at a time -
freeze them? I've never heard of freezing them before! How did they come out? Those few times in life where we found a bunch we still would eat most. but did string them with a simple needle and thread after washing and let air dry. Re-hydrating was simple and OK, but never as good as fresh.Re-gasketing the USA one yard at a time

My friend went ahead and cooked all his. Then reheated under a broiler after he froze them, pretty darn good.

HONEST story! In Spring of 1952 at the age of 8 we moved from Iowa to Missouri. My parents were avid mushroom hunters and in getting into a new neighborhood/life/etc we spent many afternoons scouting and learning the new countryside. That first year we had little success and Dad assessed that neck of the woods was not good as the woods were just not wet enough. Besides even when he would bring up the topic of morels people honestly didn't know what he was talking about. Well, anyway the next year our family had grown close with the next door neighbors who had never heard of morels etc etc so we took off one Saturday on a combination of morel hunting/fried chicken picnic adventure out in the middle of nowhere. After 3 hours of only finding one mushroom my parents were once again frustrated with this new Missouri countryside and we were about to have our picnic. WHAT happened...Dad found a huge morel and then a ring of morels and all of us went crazy! We had hit a Mother load and as I recall between the two families we gathered over 900 mushrooms that day! Dad wanted to kick himself for having shown the neighbors the site, but you know what?...that productive area became a wooded subdivision in the middle of nowhere a couple years later! Moral to the story is friends don't ask friends where they find their morels!Re-gasketing the USA one yard at a time
