Spring Hen did all the hard work but I got the glory of cooking Chicken Sauce Piquante yesterday before the game.
Got the recipe out of Chef John Folse's cookbook that he himself gave me a few years ago. It's huge and loaded with information about Cajuns and their recipes. But the recipe is also on line at:

I don't think for a minute that you are short on recipes to try, but you're right, we can all get in a rut now and then.
Cajun is a great way to get out of it.

Yea. We pay extra for it during the summer. Now that it's warmed up a bit I think I'll go switch to shorts and mow the lawn.

i cook recipes over and over again til i get them to what i consider great, then i never cook that recipe again :laugh: always looking for new directions to go in. theres no cajun food up here, my only source was chef wil for inspiration over the years, too bad he doesnt post anymorefukahwee maineyou can lead a fish to water but you can not make him drink it

Thank you. The Coop is a fun place to cook and hang out, especially when the weather is nice. Get a chance stop by for the tour. The Girls love 'meating' new people.

Chef Wil lurks from time to time. He is a wealth of recipes and knows just how to make them work on the Egg. He was the one who contacted Chef John Folse to get me the recipe book for my birthday.
Yes, I wish he would post more often.

Hi Beli. I was thinking of you while cooking this recipe and wondering what kind of twist you might give it. I think you would make a good Cajun LOL...
That's a Lodge Dutch Oven. http://www.lodgemfg.com/Logic-dutch-oven.asp
Not sure which size but it's big and heavy. Probably the 7 qt. Works very well in the large. About $50 if memory serves me. They can be ordered on line or purchased just about anywhere over on this side of the River.
You would enjoy cooking in cast iron.

thankgod for snow, i dont think theres anything i like less than mowing the grass :laugh: was out in shorts on the four wheeler yesterday on the pond, im sure everyone was thinking i lost it :ermm: :laugh: i used to weedwhack the lawn once spring, once fall, now its once every other year :laugh: i actually dont even like the neighbors cutting the lawn, the noice and that smell of cut grass is horrible, wonder if it has something to do with getting grounded with yard work as a kid :laugh:fukahwee maineyou can lead a fish to water but you can not make him drink it

Yea, I've heard the story how y'all ran 'em off to all parts and how some of 'em landed in Louisiana where they took to the swamps like ducks to water. Didn't take 'em long to learn how to cook all kinds of wild bushes and swamp critters for which they are now world famous. Not to mention making music like none other or making 'having-a-good-time' the centerpoint of their lives.

I used to have an International Workforce to do all that but they went south one winter and didn't come back.
Now I do it.

You will enjoy the process and the outcome. But if you want to kick it up a notch add a pinch or four of Gumbo File to the mix. And maybe some hot sauce if you feel like buring your innards.
