Shrimp and Scallops - Spicy grilled with Margarita Butter
This is outstanding !!!!!
-- Shrimp & Scallops --
12 Jumbo Shrimp , tails left on
12 Large Scallops
1 tablespoon Chili powder
Salt, to taste
Pepper , to taste
2 tablespoons Oil, Extra Virgin
-- Margarita Butter --
1 tablespoon Oil, Extra Virgin
½ cup Onion, Red, diced
½ cup Wine, dry white
½ cup Cream, heavy
1 cup Butter, unsalted (2 sticks)
3 tablespoons Tequila
1 lime Lime juice
Salt, to taste
Pepper , to taste
Shrimp and Scallops
Heat grill to about 450 degrees and oil the grate. Season shrimp and scallops with chili powder, salt and pepper. Brush with oil. Grill each side for 5 to 6 minutes. Serve drizzled with Margarita Butter.
(makes 4 servings)
Margarita Butter
Heat a small saucepan over medium-high heat and add oil. Add onion and cook until translucent. Deglaze pan with wine and reduce by half. Add cream, lower heat and reduce by half. Stir in butter a bit at a time, over low heat, until all is used and sauce is thickened. Stir in tequila and lime juice. Season with salt and pepper. (makes 2 cups)

Winner winner scallop dinner. That looks good. I will take it and try it tonight... Still interested in other recipes. I am finding myself liking scallops more and more. Want to meld them with the egg.

Are you looking to incorporate scallops into a recipe or are you looking for a method to cook scallops to serve as a stand alone entree?
Do you have the small bay scallops or the large diver scallops? -

If you have nice fresh scallops it's hard to beat them seared on a hot cast iron skillet in butter with a little seasoning.

I am looking to do that since I saw the lobster tails and scallops post. kroger wanted $15/lb which was just a little pricey for me...will check some other fish houses as well. I had to stop my butcher shop visits, his prices went out of the roof over night!
