looks great....next time with the scallops to take them up a notch try wrapping each one around with a thin slice of prociutto, and brown each end just like you did ...a little brush of butter and either s/p or some dizzy tsunami spin is great too ...great stuff...

Good decision - I love duck hunting, but will choose lobster and scallops over duck any time!

I don't know. The tails I cooked, I followed 5 mins per side and they came out really good. I would guess 140 but that is all it is, a guess. Maybe LC or Richard will chime in. These tails were about 10-12 oz each.

The recipe refers to jumbo tails, but jumbo is not a very objective term.

After I posted my earlier reply, I Googled and got 145* as a good internal temp (pretty close). I will do an internal on my next cook and compare to how it tastes.
