dried Porcini mushroom question

back this fall Zippylip posted his recipe for what he called cheese puff balls. I bought the dried wild Porcini mushrooms for them, but just haven't gotten around to making them yet. They are still in the clear plastic container and quite honestly those things are ulgy in that dried state! The container has no mention of a use by date so I assume as long as I keep them in a dry, sunlight free spot they will last until I do get to it this spring. I just have no experience with dried mushrooms and the better half wrinkles her nose every time she sees them in the cabinet! Maybe I need a better hiding spot, huh?

I opened a package that had been "LOST" in the spice collection for 2 years and were just as good as the day they were packaged. Just be sure to cut the stems off after rehydration as they tend to get tuff.

Steve's right. They keep a long long time.
I have a huge container of mixed dried mushrooms that I've had a couple years. Just reconstitute them in a little light broth or warm water for about 30 minutes or so and they work fine. -
How apropos. This evening I was rummaging through my pantry for some balsamic vinegar and found these.


They actually look just like the day I bought them.
Seriously though, would you eat ten year old mushrooms? -

Seriously they will be fine. Rehydrate them in chicken stock.
