Briskets

I'm going to cook two briskets this weekend, I've never done two at the same time. One is 6lb the other is 4.75lb. I'm going to use the grill extender. Should I add the weight of the two to get the cooking time or figure the time on the 6lb brisket?

Briskets are fickle... I've seen the large one take longer than the small??!? Total time is like cooking one.Kent Madison MS

I know, I'm just trying to time it right for the big Ravens game Saturday night! Looks like I'm getting up extra early tomorrow morning.

I'm doing the same thing and plan on starting mine tonight around 10 or so... Like it's been said before, briskets can be fickle and I'd rather finish up a little early and let it rest in the cooler until game time.
Go Ravens!!!

With using the extender, should I put the top brisket on foil?

I wouldn't use foil underneath, let the drippings fall on the brisket below. It can only enhance the outcome.

Unlike pulled pork, briskets are easy to reheat and you don't really lose any flavor or texture.Kent Madison MS

I cooked a brisket too high in the dome last weekend, so I'd be very careful with it. You might want to put the large one up high. If they do cook at different paces, that might equalize the cook time.

Thanks, tha tis a good idea. Should I add the weight together, my problem is just trying to figure out how long it will take. I know that no two briskets cook the same.

I would plan on 1.5 - 2 hours for the largest one... don't add togetherKent Madison MS
