I cooked some'en: Fajitas two differant kinds

Worked off graveyards and slept 3 hrs after a COLD ride home at 20 degrees! :pinch: Up to play catch up around the farm as the temps were up in low 50's after days sub freezing. Ran to local Mexican grocery and grabed some carna meat and chorizo for me and a flank stake for wife and some Aundui and PetiJean susage at the butcher. Got to get up at 3;00 in morning going duck hunting with my 72 year old Dad so needed something quick. The raws:

Tossed on the sausages while I got the other meats ready with some presimmon wood. Keep clean up easy so raised S.S grill that will go in dish washer.

Pulled the meat out of the chorizo and mixed with the pork. Added some fresh pepper of some sort shipped to me a few days ago to the mix. Who says a margerata is just for summer?!


A little sea salt, cracked pepper, DP's redeye and a squeeze of lime on flank stake cut across the grain.

When threw a great feed with minimal prep and little clean up. Even "Darth Parrot" aka Jake approved! :P Little sucker has gotten pretty good with hood. Flys all over and even back on the glass.

Great cook - got to love fajitas. Hey, my wife is from Louisiana and loves something called boo-dan...or something pronounced like that. Same with the An-Doo-EE stuff you cooked. Man- she likes to get the hot stuff!

I'm a Canuck that should have been exiled with the rest of the Acadians/Cajuns even though I'm not French. If your wife likes boudin, she has great taste. Cajuns do it with gator, shrimp, crawfish, pork and duck and others. Andouille is a spiked up version of a classic French recipe. Wonderful foods.Steve

Never seen sausage fajitas....pretty cool.
You done any duck hunting yet this year? Good luck in the morning. Not many quackers flyin around these parts -- mostly just woodies. I'm going Saturday for a few and if they aren't flying I'm taking the dog out for some rabbit. -
Definately a delish meal. Glad to see Jake back on his glass. Collar makes him look deep and mysterious. Hope all is well.

I doubt it. Only people doing anything are the ones with 2 or 3 boats and 4 or five guns setting out 100 pluse decoys, 2 or 3 wingers and A mallard machine and every one unloads everything they got if something flies over 100 yardds up or less out in big water. We pretty much hunt just Dad and I in timber and just no working birds. Well find out soon.

We eat all of it. Live on ARK./La. line and used to live in La. Budan is great and do it on the Egg from time to time. Where your wife from?

You should be Cajan though with the way you eat and enjoy life! Course your crazy enough to qualifie as well! :laugh:

Squeelers are pretty much all we have been getting as well. Just to much water to hold any Mallards. My do a little squarrel hunting soon. Basically did sausage for freezer to use in stuff later but added as a top dressing to the fehettas. Aundui helps anything like bacon with a kick!

It may make him look mysterious but he don't like it. Fortantly its working and he's healing nicely.
