Steaks that is. Is anyone else sick of this cold spell? Yes, I live in Florida. And, yes, I'm a wuss when it comes to cold weather, but this 2-week cold snap is reaching the point of absurdity! This never happens here. Go AWAY winter, you're seriously getting on my nerves!

OK, I feel better now. I have braved the cold a few times over the past 2 weeks and Egged some good food. Wanted to do steaks tonite. My preference after testing several different methods (T-rex, hot tub, sear/ dwell, etc.) has always been T-Rex. However, I felt the hot tub method would be appropiate on this frigid Florida evening. Just had to fire up the Egg, go inside, make a salad, etc., then back out for a couple of minutes sear on each side.

Definitely worth freezing my butt off!

A big bone-in Strip for me, smaller boneless ribeye for wife, both 1.5" thick. Hot tubbed @ ~105 for about an hour.
