Bacon wrapped duck

The mighty Mississippi has been very good to us the last week or so. All the sub freezing temps has helped to lock up all the fields in the delta and the ducks flocked to the river.
I marinated the breasts in italian dressing overnight and this afternoon wrapped them in bacon and on the small at 400 direct til they were 165. Dollie fried some taters and steamed some corn.

Cheers to your successes JoJo. I sure didn't do my part with the fowl this year. Outside of the DU stuff. Concentrated heavily on upland this year.

I think this afternoon was the last time for a few days til it all clears up. -
We used to River hunt,was great when all else froze up,I guess like the last week.Now we only got flooded timber and fields.I don't even bother anymore! :(

Nowadays we see most of our ducks after 2/1!!! ! :( But whadda ya expect when D.U. builds reservoirs up north and pours 10,000,000 bushels of corn out of dump trucks on manmade islands in those resevoirs????? :huh: Not another dime of my money! :ermm: Just sayin!

We seem to get big pushes of ducks only when they get a big snow up north. Then the ice of course brings em to the river.
The St Francis was out in the relief last week and I didn't even go over there. I bet it was hot. -

You're right, Hoss! Why come south when you are being spoon-fed in the midwest "preserves"? Kinda like government handout programs.......

Try this. Duck breast cubes, soaked in plain water in the frig for about 1 1/2 hour. Drain, add a can of pineapple chunks and the juice (not sugar-added). Soak for another 1 -1 1/2 hour.
Wrap with bacon and skewer with a pineapple chunk on either side of the duck kabob. Grill til rare to medium rare. Non duck eaters will LOVE it ! -

Just doesn't make sense to me. I can see a couple clowns throwing (bating) the occasional field or slough, but DU dumping millions and millions of dollars of corn? For what? Good hunting for a few local guys/groups? -

If this happens, then pictures of said feed piles would exist. I just can't wrap my little brain around the concept. My first thought is why? It just isn't reasonable or rational. Ducks move when and where they want to. It's all about the weather. We see it first hand.
Show me somthin with teeth.

I've seen it firsthand in Southern Illinois,yessir with my own eyes.I have no pics but I ASSURE you I saw it happen,Big dumptrucks dumpin loads and loads and loads of corn on a manmade penisuila(sp) in WREN Lake in Southern Illinois compliments of D.U.!!!To feed the poor ducks that could have easily flown to Southern fields flush with wastegrain? :ohmy: SKREWEM!

They only move when there is No Food!Snow cover,freeze etc.They are lazy like people,they only go as far as they have to for a meal!

I've been told it was in the 'preserves', not where they actually hunt. Also in some of the more western states. It holds the ducks in the area longer than they would have naturally stayed since they have plenty of food.

This sure wouldn't work in a state with a real winter. Even a 3 story pile of corn will cover with snow and when the water is hard, they bail. I've smacked'em in the morning and had zero in the area the next morning. The huge flocks outa Canada will even pass right over a whole state if the weathers bad enough.
If this really happens....pictures WOULD exist and wouldn't be too hard to find. i can't find any. -

I partially cooked the bacon so I could keep the duck medium rare.




Also did some without the pineapple and bacon then served with a plum sauce.

I am so ashamed. I had to use last years duck for Christmas and Thanksgiving dinners never mind felleting any out!
With the wetest year on record we have had so muck rain that the flooding is unbeleavable. Hunting in oak tree crowns in 20 foot of water. Most of the ramps we cant even get to an have to launch the boat in the middle of the road. Glad you are doing some good and can't beat those wrapped fellets! :woohoo: -
