Chipotle smoked pork

Tried something different last night, cleaning out the feezer and spice cabinet. Found a package of "pork brisket grillers" from Costco. Haven't found a way to make them too tasty yet, they have an odd texture. Rubbed them with a chipotle Southwest rub I found that someone gave me and let them sit a bit.

Put them on the egg stablized at 250 with some Jack Daniels chips. Let them smoke for about 3 hours, spritzing with a mix of OJ, cider vinegar and Chipotle Tobasco sauce.

Sliced them up and served with flat bread, spicy bbq beans, corn and guacamole & fire roasted salsa. It was pretty good. They were very tender, but I still think the texture is just odd.
