Anyone have a good menudo soup recipe? Looking to cook menudo soup for next weekends football games.

    man, i tried that stuff last weekend at a mexican joint in houston. why on earth would you want to prepare it yourself? when i was told it was a good hangover food, the only thing i could figure was that it made you throw up the liquor from the night before.

    I have been eating it for years. I love the soup with raw onions, cilantro, salt, and pepper. I tried to cook it a few years ago and it wasnt as good as I would like. Hoping someone has a great simple recipe.

    My mom used to make it all the time but I have never tried cooking it. It was delicious.

    2 lbs. tripe - sliced thin
    1/2 lb pork - sliced thin
    1 large onion, chopped
    3 buttons of minced garlic
    1 oz. Mexine Chili powder
    1/2 teaspoon Oregano
    1 can Bush's Golden Hominy and juice.

    Boil tripe in 1 T vinegar and water to cover for 5 minutes. Rinse thoroughly.

    Place all ingredients in a large pot with 2 quarts or more water. Simmer until tripe is tender and broth is thickened. Salt and pepper to taste.

    Sgt...Lots of recipes online and such...My few words of caution....blanch the tripe until it begins to tenderize, and focus on the soup separate, and add the tripe the last hour or so. Also, be prepared for a couple water changes while blanching the tripe. And...if it's going to freak you out when you start seeing grass float in the pan as it flushes from the tripe, don't bother making the soup..... :S ...It ruins the whole experience.... :blink: :laugh: Wish you the best with it though!! :)
