    THanks for the post, My kids do through alot of english muffins. I might just try making them myself.

    I first smoked the cheese one hour.

    The way I did it was I had some used lump so I started with a cleaned out egg and I put hdaf on the CI lump grate then a hand full of used lump.

    Then I started the used lump with my electric starter. After I got the lump going I placed some apple chips on the lump (chips is all I had).

    Then I placed the plate setter and a drip pan full of ice then the food grate.

    I walked away for an hour and when I got back I wasn't sure I smoked the cheese enough so I did it one more time with cherry chips because it was all I had and I was out of apple.

    So, I doubled smoked the cheese and it never got very hot. At first I placed the cheese in an open container with a lid unwrapped. After a week I double wrapped in...

    well double smoking it is proabably your problem. i only use 6 briquetts. i light them with the mapp torch and place a piece of cherry on top of each briquett. at the half hour point i flip over each chip of wood.

    Thanks Terry. I guess I will have to keep trying the cheese until it mellows out more or I will throw it out because It tastes like It was in a house fire.

    BTW My plate setter looks like yours. I called my dealer today and now I am waiting on a return call on a replacement firebox. I said something about my CI lump grate and food grate being cracked. My lump grate is almost in two. :(
