What’s a guy to do on New Years’ Eve?
Take part of yesterday’s smoked pork shoulder (2-3 lbs) made with John Henry’s Pecan Rub and make it into Tamale’s. Thanks to AZRP’s post from last week for the nudge. This is my first time.
Couldn’t fit them in the regular pot, so took the Turkey Fryer pot and it works great.
Used red onion, 1 bottle Salsa Huichol (a great hot sauce),3 Knorr Chipotle flavor cubes, salt, pepper, little coca powder, 2 tbl cumin and chicken stock. Got lucky, the Masa was pre-made by hand at the meat dept at our local Mexican grocery! Web link on recipe here.

That's kind of surprising, given the Hispanic population supporting the equine industry (and the bourbon industry's byproducts...). Can you find the dried chiles and masa (Maseca)?
I could always make you a swap - corn husks for Old Kentucky Chocolates Derby Mints....

Where did you pick up the Chipotle cubes. Never see them locally (central California)

The cubes work pretty good when you don't have the real thing handy
