Bison Tri Tip

Ok .. was supposed to do duck breast tonight ... posted a question last night and was all prepped for the cook ... except that a trip to whole foods, an amish market and a local butcher yielded NO duck breast ... but since I was at the butcher (Thanks EmandM'sDad) ... I grabbed some bison tri tip and did a complete experiment ... came out GREAT!
1.3 lb bison tri tip ... rubbed with home made rub of salt, black pepper, white pepper, coffee, cayenne, kosher salt and ground rosemary. Seared super hot ... then cooked with plate setter at 400 deg until internal was 128 deg. Was 134 after resting.
