Christmas Cooks (Newbies take note)

For all the Newbies, all these cooks came from recipes and/or techniques I learned here on this Forum. This is a great resource for you to become a fantastic Egg cook. I started a week early and roasted some pecan halves (no pic) and smoked cheese (from Firetruck's caveman technique):

I also made some Pig Candy (inspired by Spring Chicken's recent cook):

I grilled some lobster tails:
Which later became some delicious Lobster Dip (from Mainegg):
For Christmas morning I baked a sausage/cheese bread roll (from SSN686):

For Christmas dinner, a Mad Max Turkey:

and a Maple/Bourbon Ham (from Egret):

Everyone enjoyed it all, but I bit off more than I could chew and was a little 'grouchy' , so the Princess said only 1 thing to cook next year --- we'll see! :woohoo:

You done good Clark....it is amazing what we can learn from this forum.
:silly: :pinch: -
Thanks, Kim. I've learned a ton from you guys on this forum and hope to give back a little as time moves on!
Happy New Year! -
That all looks great! How was the Pig Candy? I have always wanted to try it but never been able to motivate myself
-
Definitely a learning curve. I burned (charred) several in the first batch and got a little better with the second. The wife (Princess) was NOT HAPPY as sugar on bacon is soooo unhealthy !
(It thought it was pretty good, myself). :woohoo: :woohoo: -
Very nice Clark....Really nice looking cooks.
Larry -
Dude. . . with a first week like that, I'd say you're a lock for "Rookie of the Year." You tackled more in your first week than most of us do in our first year.
Relax, enjoy, obsess, it's all good
-
Then she probably wouldn't like these http://www.savorique.com/p-1078-vosges-mos-bacon-bar.aspx but if you ever find one they are AMAZING.
-
WOW, Clark. Now that is some fantastic looking egged food. I am sure it was enjoyed by all.
Happy New Year!
FaithHappily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Great looking cooks.
Where did you get the wire mesh racks in the second picture? I've been looking for some of those.

I think it was Wally World. They are disposable, but I dishwasher them and re-use as many times as possible. I have one all folded up on the sides so it will fit in my small.
-
Thanks, Faith.
I was fun cooking all that and watching people enjoy it! The biggest stress came when trying to make the Mad Max gravy with a hot pan and too many people crowded in the kitchen.
Happy New Year ! -
Thanks, Dan, but I'm not a newbie. I just thought I would reinforce to newbies the valuable resources available on this Forum. It is THE BEST ! :woohoo:
-
Thanks, Larry!
Hope you have a great New Year! -
Clark I showed my girls these pictures and we couldn't stop laughing. In the last week I have cooked Pig Candy, Ham, Turkey, SSN's Bread roll (which was lopsided just like yours and cooked Christmas morning), opened presents. Thanks for posting my pictures

Hope the new year is as good to you and yours as the last was to me and mine.
Best wishes
Doug -
You can also use Pure Maple Syrup instead of sugar for the Pig Candy.
-
Might be easier to spread on the strips.
Thanks! -
That's funny !
The lopsided roll had to do with where I connected the ends. I will do better next time. That was the first time I had ever tried to work with dough. -
Looks amazing. Thanks for sharing.
-
That's how my lopsided roll worked too . How was the coffee by the way?
Doug -
Actually I've been saving the coffee until it's just the two of us and not in a rush like before work. I would like to "savor it".
BTW, Have you got a pic of your roasting set-up? -
Very impressive Clark.
Mike -
Thanks, Mike. It turned out great, but required a lot of planning and some degree of stress. We had "Christmas" with the kids and grandson in the late morning, while the ham and turkey were cooking, and since we are "eggers" we didn't have to worry about checking on them, as I knew they were in great hands - My Eggs! :woohoo:
-
Looks fantastic Clark, Good Lord, I wish my doctor cooked half that well. I'm getting ready to try my hand at Pig Candy also. I figure it will be good for my diabetes and bad heart.
Can you share any advice?
The Happiest of New Years to you and all of your's and wishes for many more,
Gator
