Village Idiot

We had planned on cooking a pork crown rib roast for Christmas Eve dinner for friends, but after 2 days in the fridge, it still was frozen. So, at 1:30pm, I frantically set out to find another one to cook for the guests, arriving at 6:00. I found a really nice USDA prime bone-in rib, although not cheap.

I rewatched drbbq's video, and followed his instructions exactly. From another video, I cut back the bone, then replaced it and tied it with string.

On to the BGE at 3:30, and stabilized the temp at about 370°.

After 2 hours, the I.T. was 130°, so I pulled it and tented it for about 45 minutes. If I hadn't seen ddrbbq's video, I wouldn't have known what the timing should have been. He hit it right on the money.

It was fantastic. My wife said she had never eaten as good a prime rib in any restaurant. She even mentioned that if we had a small BGE, we could have baked the rolls. I will definitely bring that up in future conversations.
The meal is prime rib, green beans, bread apple/raisin dressing, scalloped potatoes. For desert, we had pumpkin cremé brulee.

Very nice Christmas dinner!
Thanks for the pic's and step by step on roasting prime rib. I got one in the freezer for New Years and I'm soaking up all the info I can on cooking it. Dr. BBQ's video has been a great help. Nice touch with the parsley/cranberry garnish at the cutting board....makes me think your not really a village idiot.
Still no gasket replacement?
Merry Christmas -
Gary, I'm glad everything turned out for you. That can be a real panic when you go to cook something and it's still frozen. That prime rib looks fantastic!! Merry Christmas to you and your family!!

Thanks, Clay. The parsley/cranberry garnish was my wife's doings. So, I guess I still qualify for an idiot.
Merry Christmas to you and yours.__________________________________________Dripping Springs, Texas.Just west of Austintatious -
That looks awesome. Only problem is I would need a larger serving.

Thanks so much, Anne. Yes, I was panicked. I could just picture all of the good cuts of meat gone on Christmas Eve afternoon.
Merry Christmas to you and your family. Stay warm up there !__________________________________________Dripping Springs, Texas.Just west of Austintatious -
Thanks Tarheel. I must admit that I did go back for seconds.
The only thing left this morning are the bones for me to gnaw on. __________________________________________Dripping Springs, Texas.Just west of Austintatious -

Prime rib cooks can be nerve-wracking because of the pressure of the occasion and the cost of the cut, but you nailed this one. Beautiful cook, Gary.
-
I think you're right, D.O.W. :woohoo:
Now, which should it be, a mini, a small, or a medium? Decisions ....decisions.__________________________________________Dripping Springs, Texas.Just west of Austintatious -
