Turduckin long and pic heavy

well this morning I deboned the 6 lb duck and the 14 lb turkey. I left the leg bones and the wings in for presentation. It was not to very bad of a job to do. I did a basic stuffing and then pulled a little for the chix breast that I pounded out flat and then filled with the stuffing that was mixed with some La Bomba, thank you Little Steven
then I used my new micro plane from LC to grate some orange zest into another bowl of stuffing and that was for the duck. then all was rolled together and I used fire wires to lace up and hold the parts altogether. that worked perfect. It was finished up with Kona rub from Richard. so thank you all my egging friends for having a part in our Christmas dinner
I will post pics tomorrow when we cook it,

duck all boned. I only nicked a small hole in the skin :S

this will go on the egg indirect in the morning for about 5 hours. I will post more pics of it tomorrow night. I also have a few flip videos of doing this and if I can figure out how to post them I will.

LOl I thought of the fire wires at about 1 am this morning. LOL I had some wood skewers but thought I would break trying to bend and poke through the skin. these are great. I am sure the whole thing will explode when it is done cooking LOL not sure how the heck we will get it off the egg . we will see

Steve it was not hard at all. i cheated with the chix like I said used boneless breast
the stuffing I made one basic and then added La Bomba to about a cup of it for the chix and then oj zest to about 2 cups for the duck and left the rest plain for the turkey
made that this morning so it would be cold in the frig. started the trimmings, bones and vegis in the stock pot to simmer down with herbs and white wine for the gravy tomorrow and then started de-boneing, and tossed all the new bones int he stock pot. I have a huge wonderful pot of broth ready to be stained. I used my good kitchen shears, a MUST and a small sharp knife that I did just small cuts with. slow and easy. wish I could get the videos up they are not to stupid LOl -

nice job julie. .. you can pretty well hack up the duck and chicken since they go unseen. . . its the turkey you have to worry about and you did a very nice job. . . . hope you saved the duck and turkey carcas. .. together in the stock pot they make the BEST stock EVER!!! and therefore the BEST gravy ever!!!. .. make sure you make turkducken gravy, you won't be sorry!!

thank Max. oh yes all the bits and pieces went in to the stock pot with onions, celery and carrots and white wine, it just smelled to dang good in here all day!
