Hi there
Newbie from Canada here, I bought a second hand egg a few months ago and have only cooked steaks on it so far. My moms oven just blew on her and she has asked me to cook the turkey for xmas.
I decided to do it on the egg but while researching I realized that cooks use plate setter to cook indirect. I dont have a plate setter and dont think I can get one here in time.
anyway I can cook a 12 pound turkey on the egg without the plate setter?
thank you and seasons greetings

Hi and welcome !
You can use a drip pan and a roasting rack as a substitue as long as you dont have the plate setter.

Gerry where abouts do you live? I am from Oshawa Ontario and several other Canadian members might chime in.
Welcome

You could also spatchcock the turkey and cook it direct, on a raised grate.

Hi Wayne,
I am one hour east of Ottawa in a small town called Hawkesbury , just on the Quebec border.
thanks for the warm welcome -
Would you raise the rack Don?
-
Only way I cook turkey is direct spatchcocked - raised...
and this:
Rub, Kona Coffee, Hungry Man
INGREDIENTS:
1/4 cup salt
1/2 cup brown sugar
1/2 cup espresso ground (very fine) Kona coffee or instant espresso fine ground
1/4 cup garlic powder
1/4 cup ground black pepper
Procedure:
1 Mix all and keep in an air tight container.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
gerry, all good tips so far. .. other thing you can do is take a throw away pan, buy one of those big foster beer cans, open it up, pour half of it in the pan, then stick the half full can up the turkey's rear end and stand it up in the pan right on your grid .. .season the bird anyway you want (dizzy tsunami spin, salt and pepper, lowry's poultry rub, whatever)... .roast it at 375 dome temp till done. . . easy pealy and it will moist as can be!1

I was probably close to you this summer..went on a fishing trip near Petawawa on the Ottawa River.
You will love the egg.

GerrytheGreat,
It is always great seeing a new Canadian joining the fun. Welcome to eggland. I am in Ottawa.
If you are willing to take a bit of a drive, you should easily be able to get a platesetter at Capital City Applicance and BBQ
http://www.bbqing.com/index.cfm.
You can also search dealers on the Canadian BGE site:
www.biggreenegg.ca
I did a search on a Hawksbury postal code and the closest dealer to you is Barbecue Mega Centre in Vaudreuil-Dorion ((866) 334-2855).
Spatchcocking will always work ... to raise the grid, get yourself three fire bricks.
You just can't beat turkey on the egg.

Hi Charles ,
thanks for the informative reply. We are only one hour away. I bought my medium egg used and am looking forward to trading it in for a large or extra large next summer. -
I did this one direct on a raised grid. 12 pounder cooking at 370 for a hr and 45 minutes. Ice the breast for an hour first. It really works great.
-
pardon my ignorance but do you mean to put ice on the breast so it doesnt get overcooked?
