I cut the cheese

I cut each block in half and vacuum packed Sharp Cheddar and Monterrey Jack combo packs.
Used apple chips in a 10 oz can with a soldering iron


Smokin

Packed up

Smoked for a little over an hour
Pulled the plug on the iron
Left the cheese on the Egg for another hour
Tasted and I thought the cheese needed more smoke
Plugged the iron back in for another hour of smoke
Tasted and thought it was time to pull the cheese
Observations:
The smoke was real light - could just barely see it
Apple smoke not near as strong as say hickory
My soldering iron is pretty weak
Next time I'll use my woodworking branding iron which gets much hotter
Not many apple chips were charred - could use a small can

I liked the hickory better than cherry wood but with both batches, the wood chips charred substantially. But some folks liked the cherry better, just personal preferences.
Did you remove the tip and put the whole base of the iron into the can? I just used a cheap standard soldering iron, nothing powerful.Knoxville, TN

The soldering iron was in all the way to the flange. Didn't try removing the tip. Should I have removed the tip?

Frank, I don't remove the tip. Mine is a 35 watt. It produces light smoke as well. When I open the dome to check the cheese, it is full of smoke. The flow of smoke out of the egg is light due to not having much heat to start the draft.

As long as it was brand new and didn't have any lead based soldering wire leftovers on it, then it wouldn't matter. You just don't want to be smoking with lead based fumes:)Knoxville, TN

Frank, nice checker board pattern! My soldering iron is a 30 or 35 watts as well, you don't need more heat/power. I think your problem is the hole in the middle which makes it hard to heat/burn chips away from the centre. I drill the hole near the edge and by omitting the charcoal grate I can roll/shake the can left and right occasionally to expose fresh chips to the iron for fresh burst of smoke.
