40 lbs of Chuck Roast

I am cooking 18 chuck roasts for the office lunch today. It was a little over 40 lbs of chuck. Here are a few pics....oh and this cook would not have been possible without the adjustable rig...thanks Tom
Getting ready to rub them..no insulation was used in the rubbing of the roasts...LOL



all loaded up and cooking...12 on the large...3 on the small and then 3 on the large when the others were done

Then after the roasts are cooked to 160 degrees internal then they are cooked in pans until they hit 215 internal, then they are pulled and cooked in sauce...I hope everyone enjoys the beef today...

Next time I may try Fidel's idea of cooking clods of beef and pulling them. :woohoo:

chuck roll is another good cut for this, they come in 20 pound plus sections, a good butcher will cut out a nice 10/12 pound center of the roll which makes for a nice clean pull

It is a homemade sauce I "borrowed" and altered to fit the situation. I will share with you soon...

i'm getting ready to head for costco to buy prime rib for 40 in my office for tomorrow ...myself and a co-worker are cooking the entire meal (prime rib, roasted potatoes, string beans almandine) for our office party at my place, then taking it in to the office. ...should be good. . -
Chuck roll is pretty much the same cut as the shoulder clod.

could be wrong, but i dont think the chuck eye roast is part of the clod, thats the piece i usually try to get for pull and potroasts.fukahwee maineyou can lead a fish to water but you can not make him drink it

Well I must say they all (100 coworkers) seemed to like it...
I ended up with 31 lbs of cooked & pulled beef. This was 5 half AF pans. By the end of the lunch there was maybe 1/3 of a pan left. Everyone brought side and desserts and it was agreat lunch...
sorry Dr Seuss & Steven no leftover sammies this time... :woohoo: -
