40 lbs of Chuck Roast

I am cooking 18 chuck roasts for the office lunch today. It was a little over 40 lbs of chuck. Here are a few pics....oh and this cook would not have been possible without the adjustable rig...thanks Tom

Getting ready to rub them..no insulation was used in the rubbing of the roasts...LOL

all loaded up and cooking...12 on the large...3 on the small and then 3 on the large when the others were done

Then after the roasts are cooked to 160 degrees internal then they are cooked in pans until they hit 215 internal, then they are pulled and cooked in sauce...I hope everyone enjoys the beef today...

Next time I may try Fidel's idea of cooking clods of beef and pulling them. :woohoo:
