Keeping brisket overnight
field hand
Posts: 420
We plan to smoke a brisket (6# flat) for a group that's coming to our house a couple days after Christmas.
Problem is I won't be able to cook it the day the group arrives. So I'll be cooking it the day before and storing it for about 20 hours before we eat.
Would appreciate advice on storing the brisket overnight and the best way to re-heat it the next day.
Thanks in advance for your suggestions.

I would refrigerate whole, then slice and warm in aus jus immediately before serving. It will slice much better after being chilled and will warm in 5 minutes once placed in the sauce.

field hand,
Another option is to slice it and vac seal warm with some jus or sauce. Reheat in simmering water.
