Best turkey burgers ever

I know to some that may be the equivalent of finding the world's greatest rice cake, but here goes:
Started with an aioli of mayo, EVOO, cumin, coriander, spanish paprika, lemon juice and an Oregon white truffle.

Added a few tbsps to a pound of ground turkey thighs (really pumped local market has thigh meat now).

added a few onion slices, red pepper slices, costco gouda and whole wheat buns.

Egged direct at 425 with a handful of cherry wood chips. Buns til toasty, onion and peppers for 6 mins, then burgers for 5 first side, then flipped.

4 more minutes, then added cheese for a minute.

Then assembled with more aioli and consumed with a really nice Bethel Heights pinot noir.

Really and truly, the best turkey burgers I've had. The smoky paprika, earthy truffle and sweet cherry smoke matched perfectly with the pinot.

    Turkey is very EGG adaptable I have found.

    INGREDIENTS:
    2 Lbs Turkey, Ground
    1 Large Onion, Chopped Small
    2 Whole Eggs
    1 Cup Favorite BBQ Sauce
    1 Pkg Lipton Onion Mix
    "OR"
    1 Pkg Knoor's French Onion Soup Mix
    2-3 Tbs Dijon Mustard
    1-1 1/2 Cup Grated Parmesan Cheese
    1-2 Cups Italian Bread Crumbs To Bind
    BBQ Rub of Choice




    Procedure:
    1 Mix all ingredients except turkey and bread crumbs. Then mix in turkey. Slowly add in portions of bread crumbs, careful not to add so many that the meatballs will be dried out. Make meatballs about 1-1 1/2 inches in diameter. Sprinkle with your favorite BBQ rub.
    BGE:
    1 Set up BGE for indirect cook at 350°F and add some smoke of choice. I used apple. Place meatballs on rack with a smaller grid pizza rack to keep the meat from falling into fire. Cook about 35-45 minutes. Can be frozen
    2 Will probably make great turkey burgers & meatloaf. If meat loaf pull at 150°F.


    Yield: 3-4 Dozen
