Jalapeño cheese cornbread

There was a buttermilk thread a couple of days ago, and I posted that I like it when making jalapeño cheese cornbread.

Clay Q asked me to cook some up and post pictures. So, I did.

Knife came out clean and I.T. was 215°.

Here it is about to be eaten with andouille sausage. As they say down on the Atchafalaya,

If anybody wants the recipe, I'll be glad to post it. On this batch, I forgot to add the corn because I was messing with the Egg temp, but it was still good.

  • Sure, Mark. Here goes:

    1 cup Corn Meal, Yellow
    1 cup Flour , All purpose
    ⅓ cup Sugar
    1 tablespoon Baking powder
    ½ teaspoon Salt
    1 cup Buttermilk
    2 large Eggs, lightly beaten
    3 tablespoons Oil, Vegetable
    1 cup Monterey Jack cheese, shredded
    1 can (11 oz) Corn, whole kernel, drained
    3 tablespoons Jalapenos, chopped, pickled

    Stabilize the Egg to 375º F (indirect). Add 1 tablespoon vegetable oil to an 8-inch-square baking pan. Put in a 375°oven until cornbread batter is ready. This will give a good crust to the bottom. (I bought my square cast iron pan at Crate & Barrel).

    COMBINE corn meal, flour, sugar, baking powder and salt in large bowl. Combine buttermilk, eggs and oil in medium bowl. Add to corn meal mixture; stir just until combined. Stir in cheese, corn and jalapeños. Pour batter into prepared pan.

    BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack. Serve warm.
