Mad Max Prime Rib Question-Time?

What is the time required for the Mad Max Rib Roast method to say 120*?

Egg @ 500*
Sear, then roast?

Trying to plan dinner.

  • if you sear at 500 then get the temp down to 325, figure about 12 - 15 minutes per pound to 120....but keep an eye on it ....
  • I smoked a half prime rib at 250 degrees for 3 hours and pulled at 125 internal meat temperature. It was cooked to perfection and didn't vary as you got closer to the center. The outside had a light crust and was excellent. I originally planned on doing a reverse sear but was advised to skip it on this forunm in fear of over cooking the roast. I am doing the other half for New Years eve and will cook it the same as before.
  • Did the Mad Max Method. Results were excellent!

    Rubbed a thick crust of kosher salt, rosemary and cracked pepper.

    Roast on at 500*
    Cut vents to the 325* setting and allowed to fall.

    Never fell below 350*

    Right at 2.5 hours it hit 125*. Pulled and tented for about 15 minutes.

    It was fantastic!

    Need to do a couple more before Christmas. Want to try pulling one at 120* via Mad Max, and I'd like to try the 350* roast.
